Start 2026 with an Easy Chicken Recipe for a Busy Work Week

As we kick off the New Year, many of us are thinking about how to get back on track with healthy eating. After the holiday season (with a little extra indulging!), it feels good to reset with cleaner, nourishing foods. This 2026 Easy Chicken Recipe is a Pan-Seared Moroccan Spiced Chicken, made with vibrant SPICE + LEAF Ras El Hanout, and is a perfect addition to your weekly meal prep. It’s easy to make in advance, full of bold flavor, and offers multiple delicious meals throughout the week.

RECIPE
Pan-Seared Ras El Hanout Chicken
Served on Greens with Tahini Dressing

(Serves 4)
Ingredients Chicken & Salad:
1 medium onion, chopped small
1 medium yellow bell pepper, chopped small
1.5 lbs. boneless chicken breast, cut into small 1/2 cubes*
1 Tbsp. SPICE + LEAF Ras El Hanout
1 Tbsp. + 1 Tbsp. SPICE + LEAF Galili Olive Oil
Salt to taste
4 cups arugula
1/2 cucumber, sliced thin
5 cherry tomatoes,
1/2 Avocado, diced
Ingredients for Tahini Dressing
1/2 cup Tahini Paste
1 Garlic clove
Squeeze of 1/2 Lemon
1/2 cup ice-cold water
Pinch of Paprika
Instructions for Chicken Prep:
In a bowl, place cut chicken and 1 Tbsp olive oil and 1 Tbsp. Ras El Hanout over chicken until poultry is nicely coated with spice blend. Set aside. Using a sauté pan, heat the pan to high heat for a minute and then turn down to medium heat. Add the onions and bell peppers. Saute until translucent. Remove from pan, place into a bowl and set aside.
Place stove back on high heat and add chicken to pan. Continue to cook on a high heat to get a nice sear on the outside of chicken. About 4 minutes. Once chicken has a nice brown color, turn the heat down to medium and cook chicken all the way through. (Do not cover pan, chicken will get soggy and rubbery.) Once chicken is fully cooked, add the onions and bell peppers back into the pan with the chicken and cook for just a minute. Remove chicken from heat and let cool slightly.
Instructions for Tahini Prep:
Using a food processor, combine tahini, lemon juice, hot water, garlic clove and paprika and blend well. If the tahini is still too thick, add more water to thin it out to desired consistency for salad dressing.
Instructions for Salad Prep:
Place arugula, cucumbers, and tomatoes onto a platter. Place cooked chicken on top. Drizzle desired amount of Tahini dressing on top. Ready to serve!
Once everything is prepared, keep all of the components to the meal in separate containers and use as desired.
