Pomegranate, Mint & Honey Baked Salmon

It is said we first eat with our eyes and this salmon dish is a sure feast for the eyes! Enjoy this as an easy and flavorful week night meal!
INGREDIENTS

1.5 pounds Salmon (remove skin from bottom)

1 Tbsp. Deb’s Salmon Blend

1/8 tsp. sea salt

3 -5 garlic cloves, chopped.

1/8 cup pomegranate Juice
-
1/8 cup honey
-
2 Tbsp. pomegranate molasses
-
1 Tbsp. soy sauce
-
1-2 Tbsp. Olive Oil
-
1/2 lemon, one good squeeze over fish after cooked.

3 Tbsp. fresh mint, chopped, save one Tbsp. for garnish

½ pomegranate, de-seeded for garnish
DIRECTIONS

Preheat oven to 350 degrees.

In a bowl, mix all dry spices together. Rub spice blend into salmon. Place salmon in glass baking pan.

In a bowl, combine garlic, pomegranate molasses, pomegranate juice, soy sauce, honey, olive oil & mint. Whisk together well. Pour sauce over fish.

Bake for 15-20 minutes. When done, squeeze lemon on top of fish. Garnish with pomegranate seeds and remaining chopped mint. Pairs well with The Spice Way Pistachio Rice Mix.
